One Pot Shepard’s Pie Recipe

Well now that its Monday and I am back on track I decided to cook tonight.  Just becuase I am watching my weight doesn’t mean that I don’t want or can’t have ooey gooey cheesy dishes that make you all warm and cozy inside.  I decided to make shepard’s pie becuase I had all of the stuff that I needed and I had a lb of ground turkey that I needed to cook.

So here goes

1lb of 93/7 ground turkey.  I used Honeysuckle
1/2 a small onion diced
Instant Mashed Potato Flakes ( I used Hungry Jack Redskin & Yukon Gold left over from my Wisdom Teeth fiasco)
Butter/Margarine
Water
2% cheddar Cheese
Salt
Pepper
Garlic Powder

In a deep skillet ( I used Rachael Ray 6-qt. Saute Pan in green) brown the onion until tender. Add in the ground turkey to brown.  Season meat and onion mixture to your liking.  Make sure that the meat is broken up nicely and crumbly so that it covers the bottom of the pan….drain if you have excess water or fat.

Prepare instant mashed potatoes.  Your instant mashed potatoes will have a “recipe” with measurements.  If you are not counting Weight Watchers points follow the directions on your box for the 6 serving option.  If you want lighter potatoes follow the 6 serving recipe leaving out the milk and opting for low fat margarine instead.  If you have homemade mashed potatoes to use up that’s fine too, you will need about 2 1/2 cups.  Note: This is a great recipe to use up leftover mashed potatoes.

This is the way that I prepare my potatoes (this may differ depending on what type you buy) Microwave 1 3/4 cups of water, salt, garlic powder and 3 tablespoons of margarine.  Microwave until butter is melted. Add in potato flakes and stir.  Add more water if potatoes are too thick.

Layer the prepared mashed potatoes over the layer of meat in the skillet.  Top with the cheddar cheese and bake on 400 until cheese is melted and bubbly.

If you use low fat margarine, 2% cheese and omit the milk from your potatoes 1/4 of the entire skillet is about 6 points.  It’s a pretty large portion and also gives you that “cheating” feeling without going over your points budget for the day.

Any side dishes work well with this.  Green Beans, Broccoli, Garlic Bread a side salad, etc the sky’s the limit. Also this is a real crowd pleaser…Even picker eaters will eat this 🙂

New Favorite Things – Homemade Iced Coffees

WATCH OUT STARBUCKS AND CC’S! I have been making my own iced coffees at home because lets face it $5 is a bit much each morning.  I brew the coffee when I wake up and immediately pour mine into a cup to cool.  When I am ready to leave I combine by coffee with 2 tbsp of White Cholocate Mocha Coffee Creamer and 2 splenda. There are so many options out there for really great coffee drinks at home.  Try out some of the other flavors and let me know what you think.

I also use Hershey’s Dark Chocolate Cocoa in the coffee as well…delicious.  Fill with ice and enjoy.  If you watch weight watchers it is only 1 pt and yields a huge glass of delicious iced coffee.  I put this coffee into a plastic cup that I already have with a straw but I want a cute “to-go” iced coffee cup which is really hard to find.  I get some options in I google “iced coffee to go cups” but most are glass and the thought of myself juggling my purse that holds my macbook/charger and my lunch, Bailor and his breakfast and a GLASS iced coffee cup that I bought online and will probably cost me about $20 bucks….not a good image.

The Skinny Plan sucks

So as you all know I started “The Skinny Plan” last week.  After one week of watching everything I ate/drank and counting my points I only lost 1/2 a pound…seriously!!!! Come on weight…come off I have a closet full of clothes that I would love to wear!

Day 1 of the Skinny Plan

So I started the “skinny plan” today.  I am very proud of myself today! I started out really well with a granola bar and a Vitamin water zero (3pts) event after a co worker brought the best donuts to the office.

I had lunch with my bestie at Subway 6″ turkey and ham on wheat with pepper jack cheese with spicy mustard, lettuce, spinach, cucumber, bell pepper, banana peppers and salt and pepper (6 pts) with fat free chips (1 pt)

I had red beans and rice for dinner (9 pts) and a sugar free pudding (1pt) now I have 4 points left for the day and I am not hungry…how is that happening? Hope this is a good sign that I can stick to my “plan” and loose some of this dang weight.  We will see.

Steak Enchiladas….Yum

Since my husband is obsessed with his new grill we always have left over grilled food.  So I decided to use some of the many left over steaks from this weekend to make Steak Enchiladas.  Enchiladas are one of our faves but I rarely make them b/c they take a lot of time.  Hope you like the recipe.  Keep in mind that you can always substitute chicken or ground beef for teh steak.

8 oz of steak cooked and sliced thin
1 envelope taco seasoning
1 can Rotel drained
1 can corn drained
1 can black beans drained
1 can FF refried beans
2 cups shredded mexican cheese divided (I use 2%)
12-14 small tortillas (fajita size)
1 can enchilada sauce your choice of flavor

Slice cooked steak into thin strips.  In a bowl combine steak, corn, rotel, black beans, refried beans, cheese and taco seasoning.  Stir until it comes together and the refried beans makes everything stick to each other.  Spray casserole dishes or deep pans with spray and spread a thin layer of enchilada sauce onto the bottom of the pan.  Fill each tortilla with a litle bit of the mixture.  Close teh tortilla and place it into the pan seam side down.  Once the pan is full pour enchilda sauce ofer the top adn top with the additional cheese.  Back on 400 to 450 for about 30  minutes until hot and bubbly.  Add hot sauce, jalapenos etc to your liking.

Note – you will probably need 2 pans.

Also if you are following weight watchers these are normally in the 3 to 5 point range depending on the ingredients that you choose

My New Favorite Things

This is a list of a few of my new favorite things

Lady Speed Stick – Powder Scent…super cheap and super fresh I love it. The powder scent is really light so it doesn’t combat your perfume but you can definitely smell it.

Blue Bunny Caramel Praline Crunch Frozen Yogurt – This stuff is the best! It is really rich and creamy and has a great texture with a salty caramel swirl.  It is only 2 Weight Watchers pts per serving and totally worth every bit.


Sephora Metallic Eyeliner in Bronze – I love this liner! It lasts all day, it doesn’t smudge and it looks great will all earth tone eye shadows.
