One Pot Shepard’s Pie Recipe

Well now that its Monday and I am back on track I decided to cook tonight.  Just becuase I am watching my weight doesn’t mean that I don’t want or can’t have ooey gooey cheesy dishes that make you all warm and cozy inside.  I decided to make shepard’s pie becuase I had all of the stuff that I needed and I had a lb of ground turkey that I needed to cook.

So here goes

1lb of 93/7 ground turkey.  I used Honeysuckle
1/2 a small onion diced
Instant Mashed Potato Flakes ( I used Hungry Jack Redskin & Yukon Gold left over from my Wisdom Teeth fiasco)
Butter/Margarine
Water
2% cheddar Cheese
Salt
Pepper
Garlic Powder

In a deep skillet ( I used Rachael Ray 6-qt. Saute Pan in green) brown the onion until tender. Add in the ground turkey to brown.  Season meat and onion mixture to your liking.  Make sure that the meat is broken up nicely and crumbly so that it covers the bottom of the pan….drain if you have excess water or fat.

Prepare instant mashed potatoes.  Your instant mashed potatoes will have a “recipe” with measurements.  If you are not counting Weight Watchers points follow the directions on your box for the 6 serving option.  If you want lighter potatoes follow the 6 serving recipe leaving out the milk and opting for low fat margarine instead.  If you have homemade mashed potatoes to use up that’s fine too, you will need about 2 1/2 cups.  Note: This is a great recipe to use up leftover mashed potatoes.

This is the way that I prepare my potatoes (this may differ depending on what type you buy) Microwave 1 3/4 cups of water, salt, garlic powder and 3 tablespoons of margarine.  Microwave until butter is melted. Add in potato flakes and stir.  Add more water if potatoes are too thick.

Layer the prepared mashed potatoes over the layer of meat in the skillet.  Top with the cheddar cheese and bake on 400 until cheese is melted and bubbly.

If you use low fat margarine, 2% cheese and omit the milk from your potatoes 1/4 of the entire skillet is about 6 points.  It’s a pretty large portion and also gives you that “cheating” feeling without going over your points budget for the day.

Any side dishes work well with this.  Green Beans, Broccoli, Garlic Bread a side salad, etc the sky’s the limit. Also this is a real crowd pleaser…Even picker eaters will eat this 🙂

    Had Shepherd’s Pie for the first time in the UK two years ago and since I’ve been back in the states, constantly crave it. Never occurred to me to just make it at home! Thanks so much for the quick and easy recipe!

      No prob glad to help..you can always add more items into this recipe as well…super quick and easy and usually with items that you have on hand. 🙂
