Potato Soup Recipe

I had my wisdom teeth out this week so we made potato soup so that I could actually eat a substantial meal.  This recipe is a variation on a Paula Dean recipe and it is DELICIOUS!

1/2 stick of butter
1 small onion diced
2 tbsp flour
8 russet potatoes peeled and chopped into chunks
2 chuck bouillion cubes
4 1/2 cups milk
1 cup half and half
6 slices or turkey bacon
Garlic Powder
Cheddar Cheese for Garnish
Green onions for garnish

Saute bacon in pot and remove.  Add butter to bacon drippings until melted.  Sweat the onions in the bacon drippings and butter mixture until translucent.  Add in the flour and cook for 1 minute until combined.  Add in the milk, potatoes and chicken bouillion cubes and bring to a boil.  Once the soup boils turn it down to a simmer and let cook until potatoes are tender.  Mash some of hte potatoes with the back of the spoon.Add in the 1/2 and 1/2.

Garnish with cheese, bacon and green onions.

If you use skim milk, fat free 1/2 and 1/2 and light cheese it will be 6 points per cup without bacon.
